Cami Salie means "salt way" in Occitan dialect: it's the name of the road used to convey local salt to dry Bayonne ham from Salies-de-Bearn to Pau, the capital of Bearn County. This road runs along the hillside vineyards of the Juracon appellation, at the foot of the Pyrenees mountains. We produce this Juracon Sec in this area, under an Atlantic-influenced climate. Camie Salie is a blend of out two native grape varieties, Gros Manseng and Petit Manseng, hand-harvested slightly overripe. Oak aged and dry this white wine offers balance and complexity, combining amplitude and vibrant liveliness. Its intense scents of peach, citrus fruits, pear, pineapple and Bourbon vanilla will make the perfect match with scallops, line fishes, lobster as well as poultry or pork with creamy sauces. Also sauerkraut, cured hams, goat cheeses and smoked fishes like trout or salmon.
